Savory Pumpkin and Chestnut Stew (Çorba)
Çorba is a traditional Azerbaijani stew that combines the rich flavors of pumpkin and chestnuts with aromatic spices. This hearty and savory dish is perfect for warming up on a chilly day.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 cup cooked chestnuts
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the diced pumpkin, cooked chestnuts, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the pumpkin is tender.
- Season with salt and pepper to taste.
- Serve the Çorba hot, garnished with fresh herbs if desired.
