Savory Pumpkin and Chestnut Stew (Çorba)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 cup cooked chestnuts
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the diced pumpkin, cooked chestnuts, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the pumpkin is tender.
  6. Season with salt and pepper to taste.
  7. Serve the Çorba hot, garnished with fresh herbs if desired.
