Savory Rice Pancakes, also known as Dhuska, are a popular snack from the Jharkhandi Cuisine. These crispy and flavorful pancakes are made with rice and lentils, and are perfect for breakfast or as a tea-time snack.

Savory Rice Pancakes (dhuska)

Ingredients

  • 1 cup rice
  • 1/2 cup chana dal (split Bengal gram)
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Oil for frying

Instructions

  1. Wash and soak the rice and chana dal in water for 4-5 hours.
  2. Drain the water and grind the rice and dal to a coarse paste using a little water.
  3. Transfer the paste to a bowl and add chopped onion, green chilies, coriander leaves, cumin seeds, turmeric powder, and salt. Mix well.
  4. Heat oil in a pan. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy on both sides.
  5. Remove the pancakes from the oil and drain on paper towels to remove excess oil.
  6. Serve hot with chutney or sauce.
