Savory Saffron Pilaf (Zafranli Düyü)
Zafranli Düyü, also known as Savory Saffron Pilaf, is a traditional Azerbaijani rice dish that is flavored with saffron and other aromatic spices. This dish is a staple in Azerbaijani cuisine and is often served during special occasions and celebrations.
Ingredients
- 2 cups basmati rice
- 4 cups vegetable broth
- 1/2 teaspoon saffron threads
- 1 onion, finely chopped
- 3 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a small bowl, soak the saffron threads in 1/4 cup of warm water for 10 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then drain the rice.
- In a large pot, melt the butter over medium heat and sauté the chopped onion until it becomes translucent.
- Add the drained rice to the pot and stir for 2-3 minutes to coat the rice with the butter and onions.
- Pour in the vegetable broth and the saffron water, then add the salt and black pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the pilaf simmer for 20 minutes.
- Once the rice is cooked and the liquid is absorbed, fluff the pilaf with a fork and let it rest for 5 minutes before serving.
