Savory Saffron Pilaf (Zafranli Düyü)

Ingredients

  • 2 cups basmati rice
  • 4 cups vegetable broth
  • 1/2 teaspoon saffron threads
  • 1 onion, finely chopped
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a small bowl, soak the saffron threads in 1/4 cup of warm water for 10 minutes.
  2. Rinse the basmati rice under cold water until the water runs clear, then drain the rice.
  3. In a large pot, melt the butter over medium heat and sauté the chopped onion until it becomes translucent.
  4. Add the drained rice to the pot and stir for 2-3 minutes to coat the rice with the butter and onions.
  5. Pour in the vegetable broth and the saffron water, then add the salt and black pepper. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the pilaf simmer for 20 minutes.
  7. Once the rice is cooked and the liquid is absorbed, fluff the pilaf with a fork and let it rest for 5 minutes before serving.
