Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 cup refried beans
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked and crumbled chorizo
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. In a large bowl, mix the masa harina and warm water to form a smooth dough.
  2. In a separate bowl, mix together the refried beans, mozzarella cheese, chorizo, green bell pepper, onion, cilantro, salt, and cumin.
  3. Divide the dough into 6 equal portions and flatten each portion into a disk.
  4. Place a spoonful of the filling in the center of each disk and fold the dough over to enclose the filling, forming a ball.
