Savory Senegal (Thiébou Lamb)

Ingredients

  • 2 lbs lamb, cut into pieces
  • 2 cups rice
  • 1 large onion, chopped
  • 3 tomatoes, diced
  • 1 eggplant, sliced
  • 2 carrots, sliced
  • 1/2 cup cabbage, shredded
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg

Instructions

  1. Season the lamb pieces with salt, black pepper, cayenne pepper, ground ginger, ground cloves, and ground nutmeg.
  2. In a large pot, heat the vegetable oil over medium heat and brown the seasoned lamb pieces.
  3. Add the chopped onion and diced tomatoes to the pot and cook until the onions are translucent.
  4. Add the water, rice, eggplant, carrots, and cabbage to the pot. Stir well to combine all the ingredients.
  5. Cover the pot and let the Thiébou Lamb simmer for 45-50 minutes, or until the rice is cooked and the lamb is tender.
  6. Once cooked, fluff the rice with a fork and serve the Thiébou Lamb hot.
