Savory Senegal (Thiébou Lamb)

Ingredients
- 2 lbs lamb, cut into pieces
- 2 cups rice
- 1 large onion, chopped
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1/2 cup cabbage, shredded
- 4 cups water
- 1/4 cup vegetable oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
Instructions
- Season the lamb pieces with salt, black pepper, cayenne pepper, ground ginger, ground cloves, and ground nutmeg.
- In a large pot, heat the vegetable oil over medium heat and brown the seasoned lamb pieces.
- Add the chopped onion and diced tomatoes to the pot and cook until the onions are translucent.
- Add the water, rice, eggplant, carrots, and cabbage to the pot. Stir well to combine all the ingredients.
- Cover the pot and let the Thiébou Lamb simmer for 45-50 minutes, or until the rice is cooked and the lamb is tender.
- Once cooked, fluff the rice with a fork and serve the Thiébou Lamb hot.
