Savory Souvlaki Skewers (Αρωματικές σουβλάκια)

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup (60ml) olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried thyme
  • Salt and pepper to taste
  • 1 large red onion, cut into chunks
  • 2 bell peppers (any color), cut into chunks
  • 4 pita breads, for serving

Instructions

  1. In a large bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
  2. Preheat the grill to medium-high heat. Thread the marinated chicken, red onion, and bell peppers onto skewers, alternating the ingredients.
  3. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  4. Warm the pita bread on the grill for a minute on each side.
  5. Serve the souvlaki skewers with warm pita bread and your choice of tzatziki sauce, hummus, or Greek salad.
