Ingredients

  • 1 package of frozen spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped onions
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 package of phyllo pastry sheets
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the spinach, feta cheese, onions, dill, parsley, Parmesan cheese, eggs, salt, pepper, and nutmeg.
  3. Layer 5 sheets of phyllo pastry in a greased 9x13 inch baking dish, brushing each sheet with melted butter.
  4. Spoon the spinach mixture over the phyllo sheets.
  5. Layer another 5 sheets of phyllo pastry on top of the spinach mixture, again brushing each sheet with melted butter.
  6. Score the top layer of pastry with a sharp knife to create diamond or square shapes.
  7. Bake in the preheated oven for 40-45 minutes, or until the pastry is golden brown and crispy.
  8. Allow the pie to cool for 10 minutes before slicing and serving.
