Savory Stew (Estofat Saborós)
Estofat Saborós, or Savory Stew, is a traditional dish from Andorra that is perfect for warming up on a cold day. This hearty stew is packed with flavorful ingredients and is sure to be a hit with your family and friends.
Ingredients
- 1 kg beef, cubed
- 3 potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1 cup peas
- 4 cups beef broth
- 1/2 cup red wine
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the tomatoes, bell pepper, carrots, and potatoes.
- Pour in the beef broth and red wine, then add the bay leaves and paprika.
- Season with salt and pepper, then bring to a simmer and cook for 1 hour, or until the beef is tender.
- Add the peas and cook for an additional 5 minutes.
- Remove the bay leaves and serve the stew hot.
