Savory Stew (Estofat Saborós)

Ingredients

  • 1 kg beef, cubed
  • 3 potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 1 cup peas
  • 4 cups beef broth
  • 1/2 cup red wine
  • 2 bay leaves
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the tomatoes, bell pepper, carrots, and potatoes.
  4. Pour in the beef broth and red wine, then add the bay leaves and paprika.
  5. Season with salt and pepper, then bring to a simmer and cook for 1 hour, or until the beef is tender.
  6. Add the peas and cook for an additional 5 minutes.
  7. Remove the bay leaves and serve the stew hot.
