Ingredients
- 1 cup cracked wheat
- 500g chicken, cut into pieces
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt to taste
- 4 cups chicken broth
- 2 tablespoons ghee or butter
Instructions
- In a large pot, heat the ghee over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the cracked wheat, ground cumin, ground coriander, ground cinnamon, and salt. Cook for a few minutes to toast the spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, stirring occasionally, until the wheat and chicken are very tender and the mixture has thickened into a porridge-like consistency.
- Adjust the seasoning with salt and pepper, if needed. Serve the savory wheat porridge with chicken hot, garnished with fresh herbs, if desired.
