Savory Wheat Porridge With Chicken (bahraini Chicken Harees)

Ingredients

  • 1 cup cracked wheat
  • 500g chicken, cut into pieces
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt to taste
  • 4 cups chicken broth
  • 2 tablespoons ghee or butter

Instructions

  1. In a large pot, heat the ghee over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the cracked wheat, ground cumin, ground coriander, ground cinnamon, and salt. Cook for a few minutes to toast the spices.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, stirring occasionally, until the wheat and chicken are very tender and the mixture has thickened into a porridge-like consistency.
  5. Adjust the seasoning with salt and pepper, if needed. Serve the savory wheat porridge with chicken hot, garnished with fresh herbs, if desired.
