Ingredients
- 4 English muffins, split and toasted
- 8 slices of smoked salmon
- 8 eggs
- 1/2 cup of white vinegar
- Hollandaise sauce (homemade or store-bought)
- Fresh dill, for garnish
- Salt and pepper to taste
Instructions
- Fill a large saucepan with about 3 inches of water and bring to a simmer over medium heat.
- Add the white vinegar to the simmering water.
- One at a time, crack the eggs into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, until the whites are set but the yolks are still runny.
- While the eggs are poaching, assemble the Eggs Benedict by placing a slice of smoked salmon on each toasted English muffin half.
- Once the eggs are done, carefully remove them from the water with a slotted spoon and place them on top of the smoked salmon.
- Drizzle hollandaise sauce over the poached eggs and garnish with fresh dill, salt, and pepper.
