Ingredients

  • 4 English muffins, split and toasted
  • 8 slices of smoked salmon
  • 8 eggs
  • 1/2 cup of white vinegar
  • Hollandaise sauce (homemade or store-bought)
  • Fresh dill, for garnish
  • Salt and pepper to taste

Instructions

  1. Fill a large saucepan with about 3 inches of water and bring to a simmer over medium heat.
  2. Add the white vinegar to the simmering water.
  3. One at a time, crack the eggs into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, until the whites are set but the yolks are still runny.
  4. While the eggs are poaching, assemble the Eggs Benedict by placing a slice of smoked salmon on each toasted English muffin half.
  5. Once the eggs are done, carefully remove them from the water with a slotted spoon and place them on top of the smoked salmon.
