Saxon Cheese Spaetzle (Käsespätzle)

Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup grated Emmental cheese
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup butter
  • 2 onions, thinly sliced

Instructions

  1. In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small noodles. Cook for 2-3 minutes, then drain and set aside.
  3. Preheat the oven to 350°F (175°C). In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until golden and crispy. Remove the onions from the skillet and set aside.
  4. In the same skillet, add the cooked spaetzle and sprinkle the grated cheeses on top. Transfer the skillet to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  5. Remove the skillet from the oven and sprinkle the crispy onions over the melted cheese. Serve the Käsespätzle hot and enjoy!
