Saxon Cheese Spaetzle (Käsespätzle)

Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup grated Emmental cheese
- 1/2 cup grated Gruyère cheese
- 1/4 cup butter
- 2 onions, thinly sliced
Instructions
- In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small noodles. Cook for 2-3 minutes, then drain and set aside.
- Preheat the oven to 350°F (175°C). In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until golden and crispy. Remove the onions from the skillet and set aside.
- In the same skillet, add the cooked spaetzle and sprinkle the grated cheeses on top. Transfer the skillet to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove the skillet from the oven and sprinkle the crispy onions over the melted cheese. Serve the Käsespätzle hot and enjoy!
