Saxon Dill Pickles (Káposztasavanyúság)
Káposztasavanyúság, also known as Saxon Dill Pickles, is a traditional Transylvanian Saxon dish that is a staple in the region's cuisine. These tangy and flavorful pickles are a perfect accompaniment to any meal, adding a refreshing crunch and a burst of flavor.
Ingredients
- 1 medium head of cabbage, thinly sliced
- 3-4 medium carrots, peeled and cut into thin strips
- 1 bunch of fresh dill, chopped
- 3-4 garlic cloves, minced
- 2-3 tablespoons of salt
- 1 teaspoon of whole black peppercorns
- 2-3 cups of water
Instructions
- In a large bowl, combine the sliced cabbage, carrots, chopped dill, and minced garlic.
- Sprinkle the salt over the vegetables and mix well, using your hands to massage the salt into the vegetables. Let the mixture sit for 10 minutes.
- After 10 minutes, add the whole black peppercorns to the vegetable mixture and pack the vegetables tightly into a clean quart-sized jar.
- Pour enough water over the vegetables to completely submerge them, leaving about an inch of space at the top of the jar.
- Place a clean, small plate or weight on top of the vegetables to keep them submerged in the water.
- Seal the jar with a lid and let it sit at room temperature for 3-5 days, depending on your preference for the level of fermentation.
- Once the pickles reach your desired level of tanginess, transfer the jar to the refrigerator to slow down the fermentation process.
- Your Káposztasavanyúság (Saxon Dill Pickles) are ready to be enjoyed as a delicious side dish or snack!
