Saxon Parsnip Soup (Pasztinák Leves)
Pasztinák Leves, or Saxon Parsnip Soup, is a traditional dish from Transylvanian Saxon cuisine. This hearty soup is perfect for cold winter days and is packed with the earthy flavors of parsnips and other wholesome ingredients.
Ingredients
- 2 large parsnips, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 6 cups vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the diced parsnips, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the thyme. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender.
- Once the soup is ready, use an immersion blender to puree it until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Adjust the seasoning if needed, then serve the Pasztinák Leves hot, garnished with a drizzle of olive oil and a sprinkle of fresh thyme.
