Saxon Parsnip Soup (Pasztinák Leves)

Ingredients

  • 2 large parsnips, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the diced parsnips, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the thyme. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender.
  5. Once the soup is ready, use an immersion blender to puree it until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  6. Adjust the seasoning if needed, then serve the Pasztinák Leves hot, garnished with a drizzle of olive oil and a sprinkle of fresh thyme.
