Saxon Plum Cake (Szilvás Pite)
Szilvás Pite, also known as Saxon Plum Cake, is a traditional dessert from Transylvanian Saxon cuisine. This delicious cake is made with a tender crust and a sweet, juicy plum filling, perfect for enjoying with a cup of coffee or tea.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 large egg
- 1 teaspoon vanilla extract
- 2 lbs plums, pitted and cut into wedges
- 1/4 cup granulated sugar (for filling)
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9-inch round cake pan.
- In a large bowl, mix together the flour, 1/2 cup sugar, salt, and baking powder. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, beat the egg and vanilla extract. Add the egg mixture to the flour mixture and stir until the dough comes together.
- Press two-thirds of the dough into the bottom and up the sides of the prepared cake pan.
- In another bowl, toss the plum wedges with 1/4 cup sugar and cinnamon. Arrange the plums over the dough in the cake pan.
- Crumble the remaining dough over the top of the plums.
- Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
- Allow the cake to cool before serving. Enjoy!
