Saxon Plum Compote (Sächsisches Zwetschgenkompott)

Ingredients

  • 1 kg ripe plums, pitted and halved
  • 200g granulated sugar
  • 1 cinnamon stick
  • 1 vanilla bean, split and seeds scraped
  • 1/2 cup water

Instructions

  1. In a large pot, combine the plums, sugar, cinnamon stick, vanilla bean and seeds, and water.
  2. Place the pot over medium heat and bring the mixture to a simmer.
  3. Reduce the heat to low and let the compote cook for 15-20 minutes, stirring occasionally, until the plums are soft and the liquid has thickened slightly.
  4. Remove the cinnamon stick and vanilla bean from the compote.
  5. Let the compote cool slightly before serving.
