Saxon Pork Roast with Plum Sauce (Szilvás Sertéssült)

Ingredients

  • 2 lbs pork shoulder, boneless
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup red wine
  • 1/2 cup plum jam
  • 2 tbsp balsamic vinegar
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary

Instructions

  1. Preheat the oven to 325°F.
  2. Season the pork shoulder with salt and pepper.
  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side.
  5. Remove the pork from the pot and set aside.
  6. Add the chopped onion to the pot and sauté until softened, about 5 minutes.
  7. Add the minced garlic and sauté for another 1-2 minutes.
  8. Pour in the chicken broth and red wine, scraping the bottom of the pot to release any browned bits.
  9. Stir in the plum jam, balsamic vinegar, dried thyme, and dried rosemary.
  10. Return the pork shoulder to the pot, cover with a lid, and transfer to the preheated oven.
  11. Bake for 1.5-2 hours, or until the pork is tender and fully cooked.
  12. Remove the pork from the pot and let it rest for 10 minutes before slicing.
  13. Meanwhile, strain the sauce from the pot and simmer in a saucepan over medium heat until slightly thickened.
  14. Serve the sliced pork with the plum sauce drizzled on top.
