Saxon Pork Roast with Plum Sauce (Szilvás Sertéssült)
Szilvás Sertéssült, or Saxon Pork Roast with Plum Sauce, is a traditional dish from Transylvanian Saxon cuisine. This flavorful and hearty dish combines tender pork roast with a sweet and tangy plum sauce, creating a perfect balance of flavors.
Ingredients
- 2 lbs pork shoulder, boneless
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup red wine
- 1/2 cup plum jam
- 2 tbsp balsamic vinegar
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
Instructions
- Preheat the oven to 325°F.
- Season the pork shoulder with salt and pepper.
- Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear the pork shoulder on all sides until browned, about 3-4 minutes per side.
- Remove the pork from the pot and set aside.
- Add the chopped onion to the pot and sauté until softened, about 5 minutes.
- Add the minced garlic and sauté for another 1-2 minutes.
- Pour in the chicken broth and red wine, scraping the bottom of the pot to release any browned bits.
- Stir in the plum jam, balsamic vinegar, dried thyme, and dried rosemary.
- Return the pork shoulder to the pot, cover with a lid, and transfer to the preheated oven.
- Bake for 1.5-2 hours, or until the pork is tender and fully cooked.
- Remove the pork from the pot and let it rest for 10 minutes before slicing.
- Meanwhile, strain the sauce from the pot and simmer in a saucepan over medium heat until slightly thickened.
- Serve the sliced pork with the plum sauce drizzled on top.
