Saxon Potato Dumplings (Kartoffelknödel)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup all-purpose flour
  • 1 egg
  • 1 teaspoon salt

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash the potatoes.
  2. In a large bowl, mix the mashed potatoes, flour, egg, and salt until a dough forms.
  3. Divide the dough into 8 equal portions and shape each into a smooth ball.
  4. Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for 10-12 minutes, or until they float to the surface.
  5. Remove the dumplings with a slotted spoon and serve hot.
