Saxon Potato Dumplings (Kartoffelknödel)
Kartoffelknödel, or Saxon Potato Dumplings, are a traditional dish from Transylvanian Saxon cuisine. These hearty dumplings are made with potatoes and are a popular side dish in the region.
Ingredients
- 4 large potatoes, peeled and diced
- 1 cup all-purpose flour
- 1 egg
- 1 teaspoon salt
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash the potatoes.
- In a large bowl, mix the mashed potatoes, flour, egg, and salt until a dough forms.
- Divide the dough into 8 equal portions and shape each into a smooth ball.
- Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for 10-12 minutes, or until they float to the surface.
- Remove the dumplings with a slotted spoon and serve hot.
