Saxon Stuffed Potatoes (Gefüllte Kartoffeln)

Ingredients

  • 4 large baking potatoes
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 4 slices cooked bacon, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Cut a slit in the top of each potato and carefully scoop out the flesh, leaving a thin shell.
  4. In a bowl, mix the potato flesh with shredded cheese, sour cream, green onions, and bacon. Season with salt and pepper.
  5. Stuff the potato shells with the filling mixture and place them back in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Serve the stuffed potatoes hot, garnished with extra green onions and a dollop of sour cream if desired.
