Ingredients
- 4 large baking potatoes
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 4 slices cooked bacon, crumbled
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly. Cut a slit in the top of each potato and carefully scoop out the flesh, leaving a thin shell.
- In a bowl, mix the potato flesh with shredded cheese, sour cream, green onions, and bacon. Season with salt and pepper.
- Stuff the potato shells with the filling mixture and place them back in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve the stuffed potatoes hot, garnished with extra green onions and a dollop of sour cream if desired.
