Ingredients

  • 1 whole fish, cleaned and scaled
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 4 cups fish or vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the fish with salt, pepper, and a drizzle of olive oil. Place it in a baking dish and bake for 20-25 minutes, or until the fish is cooked through.
  3. Rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
  4. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  5. Add the diced tomatoes, ground cumin, ground coriander, turmeric, and cinnamon to the pot. Cook for a few minutes until the tomatoes start to break down.
  6. Stir in the rice and coat it with the spiced tomato mixture.
  7. Pour in the fish or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and stir in the chopped parsley. Season with salt and pepper to taste.
  9. Transfer the spiced rice to a serving platter and place the baked fish on top.
