Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Boil the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the pan and set aside.
  4. In the same pan, add the garlic, bell peppers, and onion. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  5. Return the shrimp to the pan and add the cooked noodles.
  6. Stir in the soy sauce, oyster sauce, and red pepper flakes. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
  8. Remove from heat and garnish with chopped green onions before serving.
