Ingredients

  • 4 fish fillets (such as hammour or grouper)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red chili, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 cup fish or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the fish fillets with salt, pepper, and a drizzle of olive oil. Grill the fish until cooked through, about 4-5 minutes per side.
  2. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, diced tomatoes, and red chili to the pan. Cook for 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, ground coriander, and paprika. Cook for another 2 minutes to allow the spices to release their flavors.
  5. Pour in the fish or vegetable broth and simmer the sauce for 10 minutes until it thickens slightly. Season with salt and pepper to taste.
  6. To serve, place the grilled fish on a platter and spoon the spicy tomato sauce over the top. Garnish with fresh cilantro.
