Ingredients
- 4 fish fillets (such as hammour or grouper)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 red chili, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 cup fish or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the fish fillets with salt, pepper, and a drizzle of olive oil. Grill the fish until cooked through, about 4-5 minutes per side.
- In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, diced tomatoes, and red chili to the pan. Cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, ground coriander, and paprika. Cook for another 2 minutes to allow the spices to release their flavors.
- Pour in the fish or vegetable broth and simmer the sauce for 10 minutes until it thickens slightly. Season with salt and pepper to taste.
- To serve, place the grilled fish on a platter and spoon the spicy tomato sauce over the top. Garnish with fresh cilantro.
