Ingredients
- 1 cup coconut milk
- 1 cup water
- 200g firm tofu, cut into cubes
- 1 cup sliced cabbage
- 1 cup sliced long beans
- 1 cup sliced carrots
- 1 cup sliced chayote
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 2 kaffir lime leaves
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
Instructions
- In a large pot, combine coconut milk, water, shallots, garlic, chilies, lemongrass, and kaffir lime leaves. Bring to a simmer over medium heat.
- Add the tofu and vegetables to the pot. Cook for 15-20 minutes or until the vegetables are tender.
- Stir in the tamarind paste, sugar, and salt. Simmer for another 5 minutes.
- Remove from heat and serve hot with steamed rice.
