Ingredients

  • 1 cup coconut milk
  • 1 cup water
  • 200g firm tofu, cut into cubes
  • 1 cup sliced cabbage
  • 1 cup sliced long beans
  • 1 cup sliced carrots
  • 1 cup sliced chayote
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 2 kaffir lime leaves
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. In a large pot, combine coconut milk, water, shallots, garlic, chilies, lemongrass, and kaffir lime leaves. Bring to a simmer over medium heat.
  2. Add the tofu and vegetables to the pot. Cook for 15-20 minutes or until the vegetables are tender.
  3. Stir in the tamarind paste, sugar, and salt. Simmer for another 5 minutes.
  4. Remove from heat and serve hot with steamed rice.
