Ingredients
- 2 cups water
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1 turmeric leaf, torn
- 1 tomato, diced
- 1 corn, cut into small pieces
- 1 carrot, sliced
- 100g pumpkin, diced
- 100g spinach, chopped
- 100g bean sprouts
- 2 red chilies, sliced
- Salt to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the lemongrass, kaffir lime leaves, and turmeric leaf. Let it simmer for 5 minutes to infuse the flavors.
- Add the tomato, corn, carrot, and pumpkin. Cook for 10 minutes.
- Stir in the spinach, bean sprouts, and red chilies. Cook for an additional 5 minutes.
- Season with salt to taste.
- Remove from heat and serve hot.
