Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 egg
- 1 teaspoon vanilla extract
- 4 cups fresh fruit (e.g., berries, peaches, or apples)
- 1/4 cup granulated sugar (for fruit filling)
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour, 1 cup of sugar, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Beat the egg and vanilla extract together, then add to the flour mixture. Mix until crumbly and set aside.
- In another bowl, mix the fruit, 1/4 cup of sugar, and cornstarch until the fruit is evenly coated.
- Press half of the crumbly mixture into the bottom of a greased 9-inch pie dish. Spread the fruit filling over the crust. Sprinkle the remaining crumbly mixture over the fruit.
- Bake for 40-45 minutes, or until the top is golden brown and the fruit is bubbling.
- Allow to cool before serving.
