蔥爆牛肉 (Scallion Beef Stir-Fry) is a classic Taiwanese dish that features tender beef slices stir-fried with aromatic scallions in a savory sauce. This dish is quick and easy to make, perfect for a delicious weeknight meal.
Ingredients
- 1 lb (450g) beef, thinly sliced
- 1 bunch scallions, cut into 2-inch pieces
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice wine or dry sherry
- 1 teaspoon sugar
- 1/2 teaspoon cornstarch
- 1/4 cup water
- 2 tablespoons cooking oil
Instructions
- In a bowl, mix together soy sauce, oyster sauce, rice wine, sugar, cornstarch, and water to make the sauce. Set aside.
- Heat the cooking oil in a wok or large skillet over high heat. Add the beef slices and stir-fry until browned. Remove the beef from the wok and set aside.
- In the same wok, add a little more oil if needed. Stir-fry the garlic until fragrant, then add the scallions and stir-fry for a minute.
- Return the beef to the wok, pour in the sauce, and stir-fry for another minute until the beef and scallions are evenly coated with the sauce.
- Transfer to a serving dish and serve hot with steamed rice.
