Scallion Beef Stir-Fry (蔥爆牛肉)

Ingredients

  • 1 lb (450g) beef, thinly sliced
  • 1 bunch scallions, cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/4 cup water
  • 2 tablespoons cooking oil

Instructions

  1. In a bowl, mix together soy sauce, oyster sauce, rice wine, sugar, cornstarch, and water to make the sauce. Set aside.
  2. Heat the cooking oil in a wok or large skillet over high heat. Add the beef slices and stir-fry until browned. Remove the beef from the wok and set aside.
  3. In the same wok, add a little more oil if needed. Stir-fry the garlic until fragrant, then add the scallions and stir-fry for a minute.
  4. Return the beef to the wok, pour in the sauce, and stir-fry for another minute until the beef and scallions are evenly coated with the sauce.
  5. Transfer to a serving dish and serve hot with steamed rice.
