Ingredients
- 2 cups all-purpose flour
- 1 cup hot water
- 1 cup chopped scallions
- 2 tablespoons vegetable oil

Instructions
- In a large bowl, mix the flour and hot water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- Divide the dough into 4 equal parts. Roll out each part into a thin circle.
- Brush the dough with vegetable oil, then sprinkle with salt and chopped scallions.
- Roll up the dough into a long cylinder, then coil it into a round pancake shape.
- Flatten the pancake with a rolling pin to about 1/4 inch thickness.
- Heat a non-stick pan over medium heat and cook the pancake for 3-4 minutes on each side, until golden brown and crispy.
- Repeat with the remaining dough portions.
- Serve the scallion pancakes hot, cut into wedges.
