Scallop Gratin (lyonnaise-style Gratin De Saint-jacques)

Ingredients

  • 1 lb fresh scallops
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the scallops and pat them dry with paper towels. Season with salt and pepper.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
