Ingredients
- 1 pound fresh scallops
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1/2 cup grated Gruyère cheese
- 1/2 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the scallops and pat them dry with paper towels. Season with salt and pepper.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the scallops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the remaining butter over medium heat. Stir in the flour to make a roux, then gradually whisk in the heavy cream and white wine. Cook, stirring constantly, until the sauce thickens.
- Remove the skillet from the heat and stir in the Gruyère cheese. Gently fold in the seared scallops.
- Transfer the scallop mixture to individual baking dishes or a shallow baking dish. In a small bowl, combine the breadcrumbs and parsley, then sprinkle over the scallop mixture.
- Bake in the preheated oven for 10-12 minutes, or until the topping is golden and the sauce is bubbly.
- Serve the scallops hot, garnished with additional parsley if desired.
