Ingredients

  • 1 pound fresh scallops
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1/2 cup grated Gruyère cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the scallops and pat them dry with paper towels. Season with salt and pepper.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the scallops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, melt the remaining butter over medium heat. Stir in the flour to make a roux, then gradually whisk in the heavy cream and white wine. Cook, stirring constantly, until the sauce thickens.
  5. Remove the skillet from the heat and stir in the Gruyère cheese. Gently fold in the seared scallops.
  6. Transfer the scallop mixture to individual baking dishes or a shallow baking dish. In a small bowl, combine the breadcrumbs and parsley, then sprinkle over the scallop mixture.
  7. Bake in the preheated oven for 10-12 minutes, or until the topping is golden and the sauce is bubbly.
  8. Serve the scallops hot, garnished with additional parsley if desired.
