Ingredients

  • 6 eggs
  • 150g sugar
  • 1 tsp vanilla extract
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 500ml heavy cream
  • 100g powdered sugar
  • 1 tsp lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, beat the eggs and sugar until light and fluffy. Add the vanilla extract.
  3. In a separate bowl, sift the flour and baking powder together. Gently fold the flour mixture into the egg mixture.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool completely. Once cooled, carefully slice the cake horizontally into three even layers.
  6. In a chilled bowl, whip the heavy cream, powdered sugar, and lemon zest until stiff peaks form.
  7. Spread a layer of whipped cream on top of the first cake layer. Repeat with the remaining layers, finishing with a layer of whipped cream on top.
  8. Refrigerate the schichtorte for at least 2 hours before serving. Garnish with fresh berries or chocolate shavings if desired.
