Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs

Instructions
- Preheat the oil in a large skillet over medium heat.
- Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness.

- Roll up the chicken breasts, tucking in the sides, to enclose the cheese completely.
- Dredge each chicken breast in flour, then dip in the beaten eggs, and coat with breadcrumbs.
- Place the breaded chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and place on a paper towel to drain excess oil.
- Serve the Schnitzel Surprise hot with your favorite side dishes.
