Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs

  • Oil for frying

Instructions

  1. Preheat the oil in a large skillet over medium heat.
  2. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness.
  3. Season the chicken breasts with salt and pepper.
  4. Place a slice of cheese in the center of each chicken breast.
  5. Roll up the chicken breasts, tucking in the sides, to enclose the cheese completely.
  6. Dredge each chicken breast in flour, then dip in the beaten eggs, and coat with breadcrumbs.
  7. Place the breaded chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through.
  8. Remove the chicken from the skillet and place on a paper towel to drain excess oil.
  9. Serve the Schnitzel Surprise hot with your favorite side dishes.
