Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 8 oz (225g) bittersweet chocolate, melted and cooled
  • 1 tsp vanilla extract
  • 6 large eggs, separated
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) apricot jam
  • 1/4 cup (25g) confectioners' sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
  2. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  3. Gradually add the melted chocolate and vanilla extract to the butter mixture, mixing well.
  4. Beat in the egg yolks one at a time.
  5. Gently fold in the flour until just combined.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate batter.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, spread the apricot jam over the top of the cake.
  11. Dust the cake with confectioners' sugar before serving.
