Ingredients

  • 500g potatoes, boiled and mashed
  • 200g all-purpose flour
  • 1 egg
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 150g bacon, diced (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, mix the mashed potatoes, flour, egg, and salt to form a dough.
  2. On a floured surface, roll the dough into long ropes and cut them into bite-sized pieces.
  3. Boil the Schupfnudel in salted water until they float to the surface, then drain them.
  4. In a large skillet, melt the butter and sauté the onions (and bacon, if using) until golden brown.
  5. Add the cooked Schupfnudel to the skillet and fry until lightly browned.
  6. Sprinkle with chopped parsley before serving.
