Schupfnudel Stir-fry
Schupfnudel Stir-Fry is a traditional Swabian dish that combines the iconic potato noodles with a flavorful stir-fry. This dish is quick and easy to prepare, making it perfect for a weeknight dinner.
Ingredients
- 500g Schupfnudel (potato noodles)
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 200g mushrooms, sliced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Add the Schupfnudel and cook until golden brown, about 8-10 minutes. Remove from the skillet and set aside.
- Heat the remaining oil in the same skillet and sauté the onion and garlic until softened.
- Add the bell peppers and mushrooms, and cook until they begin to soften.
- Stir in the paprika, thyme, salt, and pepper.
- Add the cooked Schupfnudel back to the skillet and toss to combine with the vegetables.
- Cook for an additional 2-3 minutes, then serve hot.
