Schupfnudel Stir-fry

Ingredients

  • 500g Schupfnudel (potato noodles)
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 200g mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. Add the Schupfnudel and cook until golden brown, about 8-10 minutes. Remove from the skillet and set aside.
  3. Heat the remaining oil in the same skillet and sauté the onion and garlic until softened.
  4. Add the bell peppers and mushrooms, and cook until they begin to soften.
  5. Stir in the paprika, thyme, salt, and pepper.
  6. Add the cooked Schupfnudel back to the skillet and toss to combine with the vegetables.
  7. Cook for an additional 2-3 minutes, then serve hot.
