Schwarzbier Beef Stew (Schwarzbier-Rindereintopf)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 cups Schwarzbier (dark beer)
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, toss the beef cubes with the flour until evenly coated.
  2. In a Dutch oven or large pot, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set aside.
  3. Reduce the heat to medium and add the chopped onion, carrots, and celery to the pot. Cook for 5 minutes until the vegetables begin to soften.
  4. Add the minced garlic and cook for an additional 1 minute.
  5. Pour in the Schwarzbier and beef broth, then return the browned beef to the pot. Add the bay leaves and dried thyme. Season with salt and pepper.
  6. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the beef is tender.
  7. Discard the bay leaves and adjust the seasoning if needed. Serve the Schwarzbier-Rindereintopf hot, garnished with fresh parsley if desired.
