Scottish Cranachan Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup honey
  • 1 1/2 cups fresh raspberries
  • 1/4 cup toasted oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Beat in the eggs one at a time, then stir in the heavy cream. Pour over the crust.
  4. Bake for 45 minutes in the preheated oven, or until the center is almost set. Allow to cool, then refrigerate for at least 3 hours or overnight.
  5. In a small bowl, mix the honey into the raspberries. Gently fold in the toasted oats.
  6. Spread the raspberry mixture over the chilled cheesecake before serving.
