Scottish Cranachan Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1/4 cup heavy cream
- 1/4 cup honey
- 1 1/2 cups fresh raspberries
- 1/4 cup toasted oats
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Beat in the eggs one at a time, then stir in the heavy cream. Pour over the crust.
- Bake for 45 minutes in the preheated oven, or until the center is almost set. Allow to cool, then refrigerate for at least 3 hours or overnight.
- In a small bowl, mix the honey into the raspberries. Gently fold in the toasted oats.
- Spread the raspberry mixture over the chilled cheesecake before serving.
