Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, cold and cubed
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup honey
- 1 1/2 cups fresh raspberries
- 1/4 cup toasted oats
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the mixture into the bottom of the prepared baking pan. Bake for 15-18 minutes or until lightly golden. Remove from the oven and let it cool.
- In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the heavy cream and vanilla extract. Pour the cheesecake mixture over the cooled crust.
- Bake for 20-25 minutes or until the edges are set and the center is slightly jiggly. Let it cool completely, then refrigerate for at least 4 hours or overnight.
- Before serving, drizzle the honey over the cheesecake layer. Sprinkle with fresh raspberries and toasted oats.
