Scottish Cranachan Cheesecake Bars

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 1 1/2 cups fresh raspberries
  • 1/4 cup toasted oats

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the mixture into the bottom of the prepared baking pan. Bake for 15-18 minutes or until lightly golden. Remove from the oven and let it cool.
  3. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the heavy cream and vanilla extract. Pour the cheesecake mixture over the cooled crust.
