Ingredients

  • 1 lb haggis, crumbled
  • 2 large turnips, peeled and diced
  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tbsp butter
  • 1/2 cup beef or vegetable broth
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the diced turnips and potatoes until tender. Drain and mash with 1 tablespoon of butter. Season with salt and pepper to taste.
  3. In a skillet, sauté the chopped onion in the remaining butter until soft. Add the crumbled haggis and cook until heated through.
  4. Spread the haggis mixture evenly in the bottom of a pie dish. Top with the mashed neeps and tatties, smoothing the surface with a spoon.
  5. Brush the top of the pie with the beaten egg to create a golden crust.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and crispy.
