Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup light corn syrup
  • 1/2 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract
  • 8 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F. Grease a 9x9 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar. Gradually add the flour and mix until a dough forms.
  3. Press the dough into the prepared baking pan and bake for 20-25 minutes, or until lightly golden. Let it cool.
  4. In a saucepan, combine the sweetened condensed milk, corn syrup, brown sugar, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and turns a caramel color. Remove from heat and stir in the vanilla extract.
  5. Pour the caramel over the cooled shortbread crust and spread it evenly. Let it cool and set.
  6. Melt the chopped chocolate in a heatproof bowl set over a pan of simmering water, or in the microwave in 30-second intervals, stirring until smooth. Pour the melted chocolate over the caramel layer and spread it evenly.
  7. Chill the bars in the refrigerator until the chocolate is set. Cut into bars and serve.
