Scottish Shortbread Millionaire Bars
These Scottish Shortbread Millionaire Bars are a decadent treat that combines the buttery richness of traditional shortbread with the indulgent sweetness of caramel and chocolate.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup light corn syrup
- 1/2 cup packed brown sugar
- 1/2 cup (1 stick) unsalted butter
- 1 teaspoon vanilla extract
- 8 oz semi-sweet chocolate, chopped
Instructions
- Preheat the oven to 350°F. Grease a 9x9 inch baking pan.
- In a mixing bowl, cream together the softened butter and granulated sugar. Gradually add the flour and mix until a dough forms.
- Press the dough into the prepared baking pan and bake for 20-25 minutes, or until lightly golden. Let it cool.
- In a saucepan, combine the sweetened condensed milk, corn syrup, brown sugar, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and turns a caramel color. Remove from heat and stir in the vanilla extract.
- Pour the caramel over the cooled shortbread crust and spread it evenly. Let it cool and set.
- Melt the chopped chocolate in a heatproof bowl set over a pan of simmering water, or in the microwave in 30-second intervals, stirring until smooth. Pour the melted chocolate over the caramel layer and spread it evenly.
- Chill the bars in the refrigerator until the chocolate is set. Cut into bars and serve.
