Ingredients
- 1 cup crushed digestive biscuits
- 3 tbsp melted butter
- 1 cup Scottish tablet, chopped
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
Instructions
- In a bowl, mix the crushed digestive biscuits with melted butter. Press the mixture into the base of a springform pan and refrigerate.
- In a saucepan, melt the Scottish tablet over low heat, stirring constantly. Once melted, pour over the biscuit base and refrigerate.
- In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Pour the cheesecake filling over the set tablet layer in the pan. Smooth the top and refrigerate for at least 4 hours or until set.
- Before serving, remove the cheesecake from the pan and garnish with additional chopped Scottish tablet.
