Ingredients

  • 1 cup crushed digestive biscuits
  • 3 tbsp melted butter
  • 1 cup Scottish tablet, chopped
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. In a bowl, mix the crushed digestive biscuits with melted butter. Press the mixture into the base of a springform pan and refrigerate.
  2. In a saucepan, melt the Scottish tablet over low heat, stirring constantly. Once melted, pour over the biscuit base and refrigerate.
  3. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Pour the cheesecake filling over the set tablet layer in the pan. Smooth the top and refrigerate for at least 4 hours or until set.
  5. Before serving, remove the cheesecake from the pan and garnish with additional chopped Scottish tablet.
