Ingredients
- 500g mixed seafood (shrimp, mussels, and squid)
- 4 slices of day-old bread, crusts removed
- 4 cloves of garlic, minced
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 tomato, diced
- 4 cups fish or seafood broth
- 1/4 cup fresh cilantro, chopped
- 4 eggs
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the minced garlic, chopped onion, and diced red bell pepper. Sauté until the vegetables are soft.
- Add the mixed seafood and diced tomato to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the fish or seafood broth and bring the soup to a simmer.
- Once the soup is simmering, gently break the eggs into the pot, spacing them out evenly. Cover the pot and let the eggs poach in the soup for 3-4 minutes, or until the whites are set but the yolks are still runny.
- Tear the slices of bread into small pieces and add them to the pot. Stir gently to combine and let the bread soak up the flavorful broth.
- Season the soup with salt and pepper to taste, then sprinkle the chopped cilantro over the top.
- Divide the soup into bowls, making sure each serving has an egg, and serve hot.
