Ingredients

  • 500g mixed seafood (shrimp, mussels, and squid)
  • 4 slices of day-old bread, crusts removed
  • 4 cloves of garlic, minced
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 tomato, diced
  • 4 cups fish or seafood broth
  • 1/4 cup fresh cilantro, chopped
  • 4 eggs
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the minced garlic, chopped onion, and diced red bell pepper. Sauté until the vegetables are soft.
  2. Add the mixed seafood and diced tomato to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the fish or seafood broth and bring the soup to a simmer.
  4. Once the soup is simmering, gently break the eggs into the pot, spacing them out evenly. Cover the pot and let the eggs poach in the soup for 3-4 minutes, or until the whites are set but the yolks are still runny.
  5. Tear the slices of bread into small pieces and add them to the pot. Stir gently to combine and let the bread soak up the flavorful broth.
  6. Season the soup with salt and pepper to taste, then sprinkle the chopped cilantro over the top.
  7. Divide the soup into bowls, making sure each serving has an egg, and serve hot.
