Seafood Casserole (cazuela De Mariscos)

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound white fish fillets, cut into chunks
- 1 pound mixed seafood (mussels, squid, scallops)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup frozen peas
- 1 cup fish or seafood stock
- 1 cup white wine
- 1 cup coconut milk
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large casserole or deep skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Cook until softened, about 5 minutes.
- Add the tomato paste, paprika, and cumin. Stir to combine with the vegetables.
- Pour in the white wine and let it simmer for 2-3 minutes.
- Add the seafood stock and coconut milk. Bring to a simmer.
- Add the mixed seafood, shrimp, and fish. Season with salt and pepper. Cover and cook for 15-20 minutes, or until the seafood is cooked through.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Adjust the seasoning if needed and serve hot.
