Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound white fish fillets, cut into chunks
  • 1 pound mixed seafood (mussels, squid, scallops)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup frozen peas
  • 1 cup fish or seafood stock
  • 1 cup white wine
  • 1 cup coconut milk
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large casserole or deep skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Cook until softened, about 5 minutes.
  2. Add the tomato paste, paprika, and cumin. Stir to combine with the vegetables.
  3. Pour in the white wine and let it simmer for 2-3 minutes.
  4. Add the seafood stock and coconut milk. Bring to a simmer.
  5. Add the mixed seafood, shrimp, and fish. Season with salt and pepper. Cover and cook for 15-20 minutes, or until the seafood is cooked through.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. Adjust the seasoning if needed and serve hot.
