Seafood Fried Rice (chaufa De Mariscos)
Seafood Fried Rice, known as Chaufa de Mariscos, is a popular dish in Peruvian Chinese cuisine. This flavorful and satisfying dish combines the influence of Chinese and Peruvian flavors, resulting in a delicious and unique fried rice dish.
Ingredients
- 1 pound mixed seafood (shrimp, squid, and/or scallops)
- 3 cups cooked white rice, chilled
- 3 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, and corn)
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- Heat the remaining oil in the same skillet, then add the garlic and onion. Cook until the onion is translucent.
- Add the mixed seafood to the skillet and cook until just opaque.
- Stir in the chilled cooked rice and mixed vegetables. Cook for a few minutes until heated through.
- Add the scrambled eggs back into the skillet and stir to combine.
- Pour the soy sauce over the fried rice and mix well. Season with salt and pepper to taste.
- Remove from heat and serve the seafood fried rice hot.
