Ingredients
- 1 pound mixed seafood (shrimp, squid, scallops)
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup fish or seafood stock
- 1 cup coconut milk
- 2 tablespoons ají amarillo paste (Peruvian yellow chili paste)
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh cilantro
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are softened.
- Add the ají amarillo paste, tomato paste, cumin, and paprika to the pot. Stir to combine with the vegetables.
- Pour in the fish or seafood stock and bring the mixture to a simmer.
- Add the mixed seafood to the pot and cook for 5-7 minutes, or until the seafood is cooked through.
- Stir in the coconut milk and let the stew simmer for an additional 5 minutes. Season with salt and pepper to taste.
- Garnish with chopped fresh cilantro before serving.
