Seafood Noodles (pancit Malabon)
Seafood Noodles, also known as Pancit Malabon, is a popular Filipino Chinese dish that features a flavorful mix of seafood, noodles, and vegetables. This dish is perfect for gatherings and special occasions.
Ingredients
- 1 lb thick rice noodles
- 1 lb shrimp, peeled and deveined
- 1 lb squid, cleaned and sliced into rings
- 1 cup cooked crab meat
- 1 cup pork belly, sliced into thin strips
- 1 cup chicken broth
- 1 cup fish sauce
- 1/2 cup annatto water (water infused with annatto seeds)
- 1/2 cup green onions, chopped
- 1/4 cup garlic, minced
- 1/4 cup cooking oil
- 1/4 cup shrimp paste
- 4 hard-boiled eggs, sliced
- 1/2 cup chicharron (pork cracklings), crushed
- 1/2 cup fresh cilantro, chopped
- Lemon or calamansi wedges for serving
Instructions
- Soak the rice noodles in water until softened, then drain and set aside.
- In a large wok or pan, heat the cooking oil over medium heat. Sauté the garlic until golden brown.
- Add the pork belly and cook until browned, then add the shrimp and squid. Cook until the seafood is opaque.
- Pour in the chicken broth, fish sauce, and annatto water. Let it simmer for a few minutes.
- Add the rice noodles to the wok and toss to coat the noodles with the sauce.
- Stir in the green onions and cooked crab meat. Cook for another 2-3 minutes.
- Transfer the seafood noodles to a serving platter and top with sliced hard-boiled eggs, crushed chicharron, and chopped cilantro.
- Serve with lemon or calamansi wedges and shrimp paste on the side.
