Seafood Noodles (pancit Malabon)

Ingredients

  • 1 lb thick rice noodles
  • 1 lb shrimp, peeled and deveined
  • 1 lb squid, cleaned and sliced into rings
  • 1 cup cooked crab meat
  • 1 cup pork belly, sliced into thin strips
  • 1 cup chicken broth
  • 1 cup fish sauce
  • 1/2 cup annatto water (water infused with annatto seeds)
  • 1/2 cup green onions, chopped
  • 1/4 cup garlic, minced
  • 1/4 cup cooking oil
  • 1/4 cup shrimp paste
  • 4 hard-boiled eggs, sliced
  • 1/2 cup chicharron (pork cracklings), crushed
  • 1/2 cup fresh cilantro, chopped
  • Lemon or calamansi wedges for serving

Instructions

  1. Soak the rice noodles in water until softened, then drain and set aside.
  2. In a large wok or pan, heat the cooking oil over medium heat. Sauté the garlic until golden brown.
  3. Add the pork belly and cook until browned, then add the shrimp and squid. Cook until the seafood is opaque.
  4. Pour in the chicken broth, fish sauce, and annatto water. Let it simmer for a few minutes.
  5. Add the rice noodles to the wok and toss to coat the noodles with the sauce.
  6. Stir in the green onions and cooked crab meat. Cook for another 2-3 minutes.
  7. Transfer the seafood noodles to a serving platter and top with sliced hard-boiled eggs, crushed chicharron, and chopped cilantro.
  8. Serve with lemon or calamansi wedges and shrimp paste on the side.
