Ingredients

  • 1 lb fresh thick rice noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb squid, cleaned and sliced into rings
  • 1/2 lb smoked fish (tinapa), flaked
  • 1/2 cup annatto oil
  • 4 cups seafood broth
  • 1/2 cup fish sauce (patis)
  • 1/4 cup shrimp paste (bagoong alamang)
  • 1/2 cup chicharron, crushed
  • 1/2 cup green onions, chopped
  • 4 hard-boiled eggs, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fried garlic

Instructions

  1. Boil the fresh thick rice noodles until tender. Drain and set aside.
  2. In a large pan, heat the annatto oil and sauté the shrimp and squid until cooked. Remove from the pan and set aside.
  3. In the same pan, pour the seafood broth and bring to a simmer. Add the fish sauce and shrimp paste, then stir to combine.
  4. Add the cooked noodles to the pan and toss to coat with the sauce.
  5. Arrange the seafood, flaked smoked fish, chicharron, green onions, hard-boiled eggs, cilantro, and fried garlic on top of the noodles.
  6. Serve hot and enjoy!
