Ingredients
- 1 lb fresh thick rice noodles
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb squid, cleaned and sliced into rings
- 1/2 lb smoked fish (tinapa), flaked
- 1/2 cup annatto oil
- 4 cups seafood broth
- 1/2 cup fish sauce (patis)
- 1/4 cup shrimp paste (bagoong alamang)
- 1/2 cup chicharron, crushed
- 1/2 cup green onions, chopped
- 4 hard-boiled eggs, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fried garlic
Instructions
- Boil the fresh thick rice noodles until tender. Drain and set aside.
- In a large pan, heat the annatto oil and sauté the shrimp and squid until cooked. Remove from the pan and set aside.
- In the same pan, pour the seafood broth and bring to a simmer. Add the fish sauce and shrimp paste, then stir to combine.
- Add the cooked noodles to the pan and toss to coat with the sauce.
- Arrange the seafood, flaked smoked fish, chicharron, green onions, hard-boiled eggs, cilantro, and fried garlic on top of the noodles.
- Serve hot and enjoy!
