Ingredients
- 1/4 cup olive oil
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tomato, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 2 cups short-grain rice
- 4 cups seafood or chicken broth
- 1 pound mixed seafood (such as shrimp, mussels, and squid)

Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the bell pepper, tomato, smoked paprika, and saffron threads.
- Add the rice and stir to coat with the oil and spices.
- Pour in the broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally.
- Add the mixed seafood to the pan and cook for an additional 5-10 minutes, or until the seafood is cooked through and the rice is tender.
- Season with salt and pepper, and serve with lemon wedges.
