Seafood Parihuela (parihuela De Mariscos)

Ingredients
- 1 lb mixed seafood (shrimp, squid, mussels, fish)
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup diced tomatoes
- 6 cups fish or seafood broth
- 1 cup white wine
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon aji amarillo paste (Peruvian yellow chili paste)
- 1 cup frozen peas
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the red bell pepper and cook for a few minutes.
- Stir in the diced tomatoes, cumin, paprika, and aji amarillo paste.
- Pour in the fish or seafood broth and white wine, and bring to a simmer.
- Add the mixed seafood and cook for 5 minutes.
- Stir in the frozen peas and chopped cilantro, and season with salt and pepper.
- Serve the seafood parihuela hot with lime wedges on the side.
