Ingredients

  • 1 lb mixed seafood (shrimp, squid, mussels, fish)
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes
  • 6 cups fish or seafood broth
  • 1 cup white wine
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon aji amarillo paste (Peruvian yellow chili paste)
  • 1 cup frozen peas
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the red bell pepper and cook for a few minutes.
  3. Stir in the diced tomatoes, cumin, paprika, and aji amarillo paste.
  4. Pour in the fish or seafood broth and white wine, and bring to a simmer.
  5. Add the mixed seafood and cook for 5 minutes.
  6. Stir in the frozen peas and chopped cilantro, and season with salt and pepper.
  7. Serve the seafood parihuela hot with lime wedges on the side.
