Seafood Rice (arroz Con Mariscos)

Ingredients

  • 1 lb mixed seafood (shrimp, squid, mussels)
  • 2 cups white rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 1 cup fish or seafood broth
  • 1 cup white wine
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft.
  2. Add the rice to the pot and stir to coat it with the oil and vegetables. Cook for 2 minutes.
  3. Pour in the white wine and cook until it is absorbed by the rice.
  4. Add the mixed seafood, paprika, cumin, and fish or seafood broth. Stir well and bring to a simmer.
  5. Cover the pot and cook for 15-20 minutes, or until the rice is tender and the seafood is cooked through.
  6. Stir in the frozen peas and chopped cilantro. Season with salt and pepper to taste.
  7. Remove from heat and let it rest for 5 minutes before serving.
