Seafood Rice (arroz Con Mariscos)
Seafood Rice, or Arroz con Mariscos, is a popular Peruvian dish that combines the flavors of the sea with the richness of rice. This dish is a delicious and comforting meal that is perfect for special occasions or a cozy family dinner.
Ingredients
- 1 lb mixed seafood (shrimp, squid, mussels)
- 2 cups white rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 1 cup fish or seafood broth
- 1 cup white wine
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft.
- Add the rice to the pot and stir to coat it with the oil and vegetables. Cook for 2 minutes.
- Pour in the white wine and cook until it is absorbed by the rice.
- Add the mixed seafood, paprika, cumin, and fish or seafood broth. Stir well and bring to a simmer.
- Cover the pot and cook for 15-20 minutes, or until the rice is tender and the seafood is cooked through.
- Stir in the frozen peas and chopped cilantro. Season with salt and pepper to taste.
- Remove from heat and let it rest for 5 minutes before serving.
