Seafood Rice (arroz De Marisco)

Ingredients

  • 1 lb mixed seafood (shrimp, mussels, clams)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup Arborio rice
  • 2 cups fish or seafood stock
  • 1/2 cup white wine
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
  2. Add the Arborio rice to the pot and stir to coat with the oil and vegetables.
  3. Pour in the white wine and cook until it has evaporated.
  4. Add the seafood stock, season with salt and pepper, and bring to a simmer.
  5. Add the mixed seafood to the pot and cook for 10-15 minutes, or until the seafood is cooked through.
  6. Sprinkle with chopped parsley and serve hot.
