Seafood Rice (arroz De Marisco)
Seafood Rice, or Arroz de Marisco, is a traditional Portuguese dish that combines the flavors of the sea with the richness of rice. This flavorful and aromatic dish is perfect for seafood lovers and is often enjoyed with a glass of Vinho Verde.
Ingredients
- 1 lb mixed seafood (shrimp, mussels, clams)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup Arborio rice
- 2 cups fish or seafood stock
- 1/2 cup white wine
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
- Add the Arborio rice to the pot and stir to coat with the oil and vegetables.
- Pour in the white wine and cook until it has evaporated.
- Add the seafood stock, season with salt and pepper, and bring to a simmer.
- Add the mixed seafood to the pot and cook for 10-15 minutes, or until the seafood is cooked through.
- Sprinkle with chopped parsley and serve hot.
