Seafood Stuffed Avocado Boats
These Seafood Stuffed Avocado Boats are a delicious and refreshing dish that highlights the flavors of Curaçao. The combination of fresh seafood and creamy avocado makes for a perfect appetizer or light meal.
Ingredients
- 2 ripe avocados
- 1/2 lb cooked shrimp, chopped
- 1/2 lb lump crab meat
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 tbsp chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a bowl, combine the chopped shrimp, lump crab meat, red bell pepper, red onion, cilantro, mayonnaise, and lime juice. Season with salt and pepper, and mix well.
- Cut the avocados in half and remove the pits. Scoop out a little bit of the flesh from each avocado half to create a larger cavity.
- Fill each avocado half with the seafood mixture, mounding it on top.
- Serve immediately and enjoy!
